The ingredients shown are enough for two large cakes. This delicious cake improves with keeping and is an ideal Christmas cake. I really should have started this year’s cake months ago because the one I made last October (of which I still have a little left) is reaching perfection now. I’m going to leave this to soak all week and make up the cake (stage two) next weekend. I’ll post the stage two mosaic then.
